Why not dehydrate?

We talk about food storage or stocking things like MRE'S for the just in case situation. Why not consider a one time investment in a food dehydrator. Did you know that dehydration of food only takes a little nutrition out of it but can make almost anything last up to a year or longer. The more moisture that's pulled the longer it will last. Even without refrigeration.  Something to chew on.
